In this project we assessed the effects of a salad bar on the dietary intake of grade school children in a title one school. Without the salad bar present we observed diets largely deficient in key nutrients. With the salad bar present we saw many of these deficiencies ameliorated. Many of the children at our study school are considered at risk for chronic disease and malnutrition based on their family’s financial status. Our work reiterates the presence of an institutionalized system of poor health in our schools, and presents simple, pragmatic, and effective solutions for change.
